Homemade Chicken Pizza – a new family fav

Wow, I went from zero to hero in one fairly easy dinner tonight.  Let me start at the beginning… Neil, who has been Chief Cook for our entire marriage (thank God) texted me early this morning, “How about homemade pizza tonight?”  I texted back, “Awesome!”  He replies back, “Notice I didn’t say ‘Hometown Pizza’, I said ‘homemade pizza'”.  I was like, “Delish!  Sounds great honey!”  I mean, right?  My awesome husband was going to make us homemade pizza, I’m game!

As with most couples, we had just had a severe miscommunication.  He picked up on it, but I was a little slower.  He texted me a few minutes later with, “So, you’re going to make homemade pizza, right?”  I was like, “Huh?!  How’d you get that from our previous texts?!”  But he convinced me that my evening shoot was going to be rained out (it was) and that I would have plenty of time (I did).

Ok, now on to my new world famous pizza.  A quick google search landed me a delicious sounding Chicken Pesto Pizza recipe found HERE from trustworthy Taste of Home.  The only ingredient I omitted was the peppers, not a big fan.  I added slightly more chicken than the recipe called for (pretty daring of me) and I also embellished the crusts with a parmesan cheese/butter mixture after they came out of the oven.  Oh, and I also added nearly triple the cheese than what it calls for and a huge spoonful of minced garlic.  Everything is better with more cheese, right?

(I’m pretty proud about this new accomplishment, and if you tasted my last attempt at spaghetti, you’d understand why.)

The pizzas were a HUGE hit.  Regan even requested them for her birthday meal, which is a huge honor.  Neil commented that this was my best meal ever  (which politely means that this is the only good meal I’ve made, lol).  So I can cherish this moment forever, I snapped a few shots with my iPhone, and will keep them as future inspiration.  ; )
